I’m Really trying to up my baking game this year, so when I saw these dark chocolate eclairs I knew I had to give them a go. This recipe is part of the King Arthur Flour Bakealong Challenge & once you master the dough, the flavor combinations are endless.
Watching the Great American Baking Show, I saw the bakers complete a challenge making a pâte à choux dough for their desserts & seeing their step by step process gave me the confidence to try it at home.
Well, my first batch did not turn out the way I planned. I couldn’t find my digital thermometer, so I think I put the flour in too early. When I baked the pâte à choux, they were little flatbreads instead of fluffy eclairs. Bummer- the flat breads were not going to work for this super dark chocolate filling. I hunted down my digital thermometer & the second batch turned out really great. This is a picture of the second batch. I didn’t do a perfect job piping them out, but they got covered in chocolate, so all was well. One of the things I Really love about baking is that I’m always learning & if I make a mistake, I do better the next time.
This filling was to die for. I was rich, thick & so chocolaty without being overly sweet. Now, If you’re not Really Into Dark Chocolate then King Arthur has some other options for the fillings. This one is super tasty, but my mom is more of a milk chocolate lover, so she wasn’t that Into it. No worries though, more for me.
This is my first Bakealong challenge, but certainly not my last. This was a recipe I might not have tried otherwise & the blog post makes it so much easier than following a standard recipe. I felt very accomplished to make these eclairs. They were surprisingly easy & sure to be a showstopper!
