Buttery Jam Thumbprint Cookies

Last weekend I was in the Christmas spirit.  The house was decorated, it was cold outside, we had a fire going, and I had done all of the laundry – a truly magical Sunday evening, so I thought it would be the perfect time to do some Christmas baking!  I had prepared by buying about a ton of butter that was already sitting on the counter, soft and ready for some cookies.  Then I decided to go down the wormhole of looking for the best Christmas cookie recipe on the internet.  Usually I will spend over an hour going through hundreds of recipes, but this time I came across an article titled This Is The Most Popular Holiday Cookie on Pinterest on Delish, and my search was over.  The Buttery Jam Thumbprint Cookie recipe was from the blog Chew Out Loud.

Yep, I was going to make these cookies.  I am not the best baker, but I love doing it, and last year for Christmas my boyfriend finally got me a Kitchen Aid Mixer (I think he had his own motives), which has motivated me to do a lot more.  When I looked at this recipe, I could not believe how simple the it was.  Six ingredients! I started mixing.

Hey, I’m not a great photographer either.  But you get the point.  These came together really quickly.  Butter, powdered sugar, vanilla, salt and flour.  Roll them into balls, and you’ve got your cookies started.  It said to bake them on parchment paper.  I didn’t have parchment, so I used foil.  I don’t know enough about baking to know how much this affects things.

Cookies were looking good before the oven.

I put my thumbprints in.  I wanted a lot of jam so I made my thumbprints pretty big (or maybe I just have fat thumbs…).  I used nice preserves because that is going to be the real flavor of the cookie.  I picked cherry and peach, because that is what I like and because red and orange are pretty.

Here they are ready for the oven.

And twenty minutes later they are ready, cooling, waiting for powdered sugar!

Nice and golden on the edges, and you can see that the jam cooked down a bit.  Now the waiting game – they need to be cool before the powdered sugar is applied.

This is the easiest way I know to put on powdered sugar.  Also I need a manicure.

The finished product looked so much better than I expected!  Usually when I make recipes they never turn out as pretty as the original.  I think this means they are foolproof. I am Really Into This recipe!
