What makes a babka a babka? I know that a babka is an enriched dough, but what really makes it a babka instead of just a loaf of tasty bread? Stuff like this bugs me, so I had to look it up. Let’s head to the source: Wikipedia.

What is a Babka?

Evidently, there are two types of babkas. Both are named after “grandmother” but one is made in a bundt type of pan, often with pleats to represents Grandmother’s skirt. The babka I’m talking about today contains a dough that is doubled, then twisted & rises again in a loaf pan. The twisted, loaf pan babkas often contain fruit or chocolate. Let’s Bake with Cranberries

Now, I know a lot of people only use cranberries between November 20th & December 20th, but that’s not me. I am Really Into Cranberries! A few years ago, I began to pick cranberries. Let me tell you, it’s not for the weak. Mostly, cranberry fields are flooded & this makes it (MUCH) easier to harvest the tiny red berries. I learned all about cranberries at the Cranberry Museum in Long Beach, Washington. We also enjoyed a super tasty scoop of cranberry ice cream at the museum.

Did you know the US has a cranberry surplus? I think cranberries are so underutilized & I just don’t get it. I think they are so tasty & can be enjoyed in so many different ways. Also, cranberries have so many health benefits for your gut, your urinary tract & your heart. These little guys are abundant, tasty & powerful. Seriously, what are we going to do with all these cranberries?

I love the flavor of cranberry & orange. When we make cranberry sauce for Thanksgiving, I throw plenty of orange juice & orange zest into the mixture.

Babkas are pretty simple, but take your time with the rolling & cutting. You will roll this dough up into a wide little roll. Then, you’ll seal the ends & take a sharp knife & cut slits to expose the filling. Quickly & gently, you will braid or twist the dough to create the “pleating” effect of the bread. Then, it’s time to rise!
