Lord knows I love me a good cinnamon roll. When things go wrong & I have a rotten day, a little sugar paired with a sweet dough is my savior. What can I say, I’m a lover of all carbs.

Now, I know I share a good amount of my baking successes on Instagram, Twitter & Facebook. It’s fun & I like to show what I’ve made for my loved ones. Let’s be real though, there are some fantastic failures as well. This King Cake Cinnamon Roll Recipe came from one of my worst & most stressful bakes.

Making The Most of a Baking Fail

A while back, I had an audition for a television show about baking. I’ve made my Mardi Gras King Cake a million times. Okay, I’m exaggerating, but the point is that I’m confident I can make it. So, imagine my horror when the day of my audition, my King Cake dough went nuts. It wasn’t rising, it was sticky & honestly, it was a total baking fail. I blocked out many of the details because I was stressed to the max.

With my time running out, I said to hell with it & made cinnamon rolls in case my cake didn’t finish in time. Well, I didn’t make it on the show, my King Cake did in fact NOT get done, but I found out King Cake Cinnamon Rolls are a force to be reckoned with. I should’ve brought them instead! Seriously, they are so good!

Truer words were never spoken. I love a good King Cake & I love a good cinnamon roll, so both together are HEAVEN.

First, this dough is legit. It’s easy to work with & the mix of lemon, vanilla, cinnamon & nutmeg tastes JUST like the King Cakes I’m used to.

The filling is no joke either. It’s more like a cinnamon paste. Because it’s thick, it doesn’t run all over the place in the oven.

The filling is pretty easy to smooth over the dough. Try to get it close to the edges because it helps hold it together. I ALWAYS struggle with this part!

Roll with the longest side of the dough, so you can make the most rolls. Also, I use dental floss to cut the rolls. It works better than anything else I’ve tried. Be sure not to use flavored floss, unless you want a minty cinnamon roll. I’ve done it & not on purpose.

Let these guys rise for 1 to 2 hours & then they are ready to hit the oven. See those EXTRA tails? That’s because I didn’t spread my filling all the way to the edge. It doesn’t bother me, but if it bothers you, feel free to trim them.

Ayyyyyyeee! I am Really Into This King Cake Cinnamon Roll Recipe. It’s like eating a mini King Cake any time of the day. If you’re having a Mardi Gras Party, it would be SO easy to slide a baby into the roll after they are finished cooling. While I am a purist, you could easily add nuts, chocolate, berries, jam or anything into your cinnamon roll filling. No matter how you choose to eat them, you’re sure to enjoy them!

Ingredients

  • Ingredients

DOUGH

  • 1/2 cup butter, melted
  • 1 cup lukewarm milk
  • 3 large eggs
  • 4 to 4 1/2 cups Unbleached All-Purpose Flour
  • 1/3 cup granulated sugar
  • 1/3 cup nonfat dried milk
  • 1 1/4 teaspoons salt
  • 2 1/2 teaspoons  instant yeast
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon grated lemon rind

FILLING

  • 1/2 cup unsalted butter softened to room temperature
  • 2 teaspoons ground cinnamon
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • large pinch of salt

CREAM CHEESE VANILLA BEAN ICING

  • 1/2 cup unsalted butter softened to room temperature
  • 1/2 cup of cream cheese softened to room temperature
  • 2 cups of powdered sugar sifted
  • 2 teaspoons vanilla bean extract
  • 1 tbsp milk
  • large pinch of salt

    FOR THE DOUGH & FILLING:

    1. Use a mixer to mix & knead all dough ingredients together. You will knead the dough until all ingredients are combined. Know that the dough will be wet & sticky.
    2. Place the dough in a large bowl, cover & let it rise for about an hour.
    3. Transfer the dough to a lightly floured work surface that's large enough to accommodate a large rectangle of dough. If you can stretch it to about 20" x 16"  you're in good shape. Anything that resembles a rectangle will do just fine.
    4. Now, we make the filling by mixing the butter, sugar, vanilla, cinnamon & salt together. It should be fairly smooth & like a soft paste.
    5. Spread the filling onto the dough as best you can. Try to get it to the edges & cover the entire dough surface.
    6. Roll the dough from the longest edge & it will make a long cylinder.
    7. Using floss (not flavored!), begin to cut cinnamon rolls a little over an inch each.
    8. Transfer the cut rolls onto a cookie sheet covered in parchment paper.
    9. Cover the rolls again with a loose plastic wrap for 1-2 hours until they've risen. Likely, they won't double, but they will rise more in the oven.
    10. Bake the rolls at 350 degrees for 20 - 25 minutes until golden brown.

    ICING

    1. Beat the cream cheese & butter until well mixed & softened. Add the powdered sugar & vanilla to make a smooth icing.
    2. Spread the icing over the cooled rolls & decorate as you please.
