DOUGH

  • 1/2 cup butter, melted
  • 1 cup lukewarm milk
  • 3 large eggs
  • 4 to 4 1/2 cups Unbleached All-Purpose Flour
  • 1/3 cup granulated sugar
  • 1/3 cup nonfat dried milk
  • 1 1/4 teaspoons salt
  • 2 1/2 teaspoons¬† instant yeast
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon grated lemon rind

FILLING

  • 1/2 cup unsalted butter softened to room temperature
  • 2 teaspoons ground cinnamon
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • large pinch of salt

CREAM CHEESE VANILLA BEAN ICING

  • 1/2 cup unsalted butter softened to room temperature
  • 1/2 cup of cream cheese softened to room temperature
  • 2 cups of powdered sugar sifted
  • 2 teaspoons vanilla bean extract
  • 1 tbsp milk
  • large pinch of salt

FOR THE DOUGH & FILLING:

  1. Use a mixer to mix & knead all dough ingredients together. You will knead the dough until all ingredients are combined. Know that the dough will be wet & sticky.
  2. Place the dough in a large bowl, cover & let it rise for about an hour.
  3. Transfer the dough to a lightly floured work surface that's large enough to accommodate a large rectangle of dough. If you can stretch it to about 20" x 16"  you're in good shape. Anything that resembles a rectangle will do just fine.
  4. Now, we make the filling by mixing the butter, sugar, vanilla, cinnamon & salt together. It should be fairly smooth & like a soft paste.
  5. Spread the filling onto the dough as best you can. Try to get it to the edges & cover the entire dough surface.
  6. Roll the dough from the longest edge & it will make a long cylinder.
  7. Using floss (not flavored!), begin to cut cinnamon rolls a little over an inch each.
  8. Transfer the cut rolls onto a cookie sheet covered in parchment paper.
  9. Cover the rolls again with a loose plastic wrap for 1-2 hours until they've risen. Likely, they won't double, but they will rise more in the oven.
  10. Bake the rolls at 350 degrees for 20 - 25 minutes until golden brown.

ICING

  1. Beat the cream cheese & butter until well mixed & softened. Add the powdered sugar & vanilla to make a smooth icing.
  2. Spread the icing over the cooled rolls & decorate as you please.
