One Pot Beef Chili

A tasty & simple one-pot version of satisfying beef chili.

Ingredients

  • 1/2 tablespoons olive oil
  • 2 pounds 90/10 lean ground beef
  • 4 cloves garlic minced
  • 1 medium white onion diced
  • 3 tablespoons tomato paste
  • 3 tablespoons Al Pastor Taco Seasoning
  • 2 tablespoons chili powder
  • 2 teaspoons cocoa powder
  • 1 1/2 teaspoons ground cumin
  • 29 oz can tomato sauce
  • 2 cups vegetable or beef stock
  • 1 15-ounce can chili beans
  • 1 15-ounce can dark red kidney beans, drained and rinsed
  • Kosher salt and freshly ground black pepper to taste
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in Dutch oven; add onions & cook about 3-5 minutes or until soft. Add garlic & cook one minute
  2. Add lean ground beef and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks. Drain excess fat if needed.
  3. Stir in tomato paste, Al Pastor Taco Seasoning, chili powder, paprika, oregano, cocoa powder and cumin.
  4. Stir in stock, scraping any browned bits from the bottom of the pot.
  5. Stir in tomato puree and beans
  6. Season with salt and pepper, to taste. Simmer for at least 10 minutes.
  7. Serve immediately, garnished with sour cream and cheese, if desired.
