Blue Apron’s Chickpea & Cauliflower Tagine with Couscous & Pita Chips
A few weeks ago, my husband tells me he is no longer eating meat. Evidently, watching a lot of Netflix documentaries about factory farms will do that to a person. It’s not a huge deal to me as I’m not a big meat lover anyway. Not only is he not eating meat, but he’s limiting all animal products; like 99% Vegan.
That’s cool with me, but, we have kids! One of our favorite weeknight recipes is Lemon Chicken, or Spaghetti & Meatballs. The first week, I wasn’t stressing. Sure, I can cook some Vegetarian-ish meals, Come Week Two, I’m like, “HELP!” Thankfully, this is where Blue Apron comes in.
Blue Apron to the Rescue
About a year ago, Jessica reviewed Blue Apron & Plated. Almost weekly, Jessica raves about both meal delivery services to me. With Derek’s new plant-based diet, I figured this was the best time to try them out. After looking into both services, we opted for Blue Apron’s Vegetarian Meal Plan. Our first week was a total success. Blue Apron’s Chickpea & Cauliflower Tagine with Couscous & Pita Chips was our third Blue Apron meal. We loved it so much we made it the next night.
Trying New Ingredients
I’m kind of embarrassed to admit this, but this is my first time to cook chard. One thing I love about this recipe is you cook both the leaves & the stems of the chard. There is nothing wasted!
Check out this Tagine! The Ras El Hanout gives the cauliflower such an interesting flavor. Although I substituted McCormick’s Moroccan Seasoning in place of the Ras El Hanout, we didn’t notice a huge difference. Of course, the couscous is a great vehicle for the Tagine, but it’s so good it can be eaten alone.

One of the really cool things about Blue Apron is they have their recipes online. While I’ve adapted this recipe to make it easier for us on weeknights, feel free to use the Blue Apron version. Either way, it is delicious!
Blue Apron's Chickpea & Cauliflower Tagine with Couscous & Pita Chips
This is one of our favorite dishes from Blue Apron. It's a winner & a fun way to try new flavors.
- ½ cup Couscous
- 1 Yellow Onion
- 16 oz Chickpeas
- 2 cloves Garlic
- 2 Lemons
- 1 head Cauliflower
- 1 Package Pita Bread
- 1/2 cup Greek Style Yogurt
- 1/4 cup Feta Cheese
- 2 Tbsps Tomato Paste
- 2 Tbsps Golden Raisins
- 1 Tbsp Ras El Hanout Moroccan Seasoning
- 1 Bunch Chard
Preheat the oven to 450°F. Cut the cauliflowers into small pieces. Peel & cut the onion into 1/2-inch-wide wedges. Peel and roughly chop the garlic. Separate the chard leaves and stems; roughly chop the leaves and thinly slice the stems. Drain and rinse the chickpeas. Quarter the lemon. Cut the pita bread into 8 equal-sized wedges.
Cook the couscous as directed & keep warm.
While the couscous cooks, in a large pot, heat a drizzle of olive oil on medium-high until hot. Add the cauliflower pieces and sliced onion; season with salt and pepper. Cook, stirring occasionally, 4 to 5 minutes, or until slightly softened. Add the chopped garlic and sliced chard stems; season with salt and pepper. Cook, stirring occasionally, 2 to 4 minutes, or until the stems are softened. Add the tomato paste and ras el hanout (Moroccan seasoning). Cook, stirring frequently, 1 to 2 minutes, or until thoroughly combined.
Add 1-2 cups of water to the pan; season with salt and pepper. Cook, stirring occasionally, 9 to 11 minutes, or until the water has cooked off and the cauliflower is softened. Add the chopped chard leaves, raisins, and chickpeas; season with salt and pepper. Cook, stirring occasionally, 3 to 4 minutes, or until the leaves are wilted. Turn off the heat; stir in the juice of 2 -4 lemon wedges and a drizzle of olive oil.
While the tagine cooks, place the pita wedges on a sheet pan. Drizzle with olive oil and turn to coat; arrange in an even layer. Toast in the oven 4 to 6 minutes, or until lightly browned and crispy. Remove from the oven and season with salt and pepper to taste.
While the pita wedges toast, season the Greek yogurt with salt and pepper to taste. Stir the Feta cheese (crumbling before adding) into the pot of cooked couscous. Season with salt and pepper to taste. Serve the finished tagine and finished couscous with the pita chips and remaining lemon wedges on the side. Top the tagine with the seasoned Greek yogurt.
Substitutions: Often, we omit the raisins & have substituted the labneh cheese for Greek Style Yogurt. Also, I could not find Ras el Hanout anywhere, but I was able find Moroccan Seasoning easily. It makes for a fine substitution. I've also been out of tomato paste & substituted tomato sauce. Just omit the water added to the cauliflower.
For Vegan substitutions: Add the feta to individual nowls rather than the couscous & omit the greek style yogurt.
