The Noble Pig is a blog that I am Really Into. Written by Cathy Pollak of the Noble Pig wineries based here in Oregon, it has wonderful recipes, especially for entertaining! When I want a hearty meal on a cold night and I have already made too much mac and cheese, I love making the Noble Pig Soup Recipes from her blog. The Dill Pickle Soup is so unique and delicious! A total game changer. Tortellini and Baked Potato soup are hearty and delicious classics that I want to make over and over again.
Noble Pig Dill Pickle Soup
Dill Pickle Soup, is that even a thing? This was my initial reaction when I first saw this Noble Pig Facebook Post.
This soup is super easy & Really affordable. It’s basically potatoes, carrots, sour cream & a jar of dill pickles. If you don’t like pickles, then this is not the soup for you. While you can use fewer pickles than the recipe calls for, the pickle juice adds so much irreplaceable flavor.
To me, Noble Pig’s Dill Pickle Soup tastes like a creamy Baked Potato Soup, but with a little tartness thrown in. I love it. I’ve made at least 5 batches of it in the past few month & there’s no end in sight. I just can’t get enough. Add a loaf of crusty bread & a cold Coke, I’m in heaven.
Noble Pig Sausage Tortellini Soup
Where the Noble Pig Dill Pickle Soup is light & refreshing, this Sausage Tortellini Soup is hearty & rich. We’ve made it at least 3 times & it’s Really satisfying & wonderful for a cold weather day. Now, Cathy suggests using the Jimmy Dean All-Natural Regular Pork Sausage & I agree. It’s got the right fat content & lots of flavor without being too spicy for the kids. Just be sure to drain the fat out of the pan…oops.
Here’s another tip. The first time we made this I bought Buitoni Tortellini & it was “just right”. The next time, I used a larger Tortellini from Costco & it was more of a two-bite pasta & took up a TON of room in the soup. We also added a bit more spinach because I could a little more greens in my diet. Any excuse, right?
Noble Pig Baked Potato Soup
I am Really Into a plain baked potato lathered up with butter, sour cream, chives, bacon, cheddar- the whole nine. I’ve searched far & wide for a Baked Potato Soup recipe that has a similar flavor. I finally found one that I love from Noble Pig.
Perhaps it’s user/chef error, but my previous attempts at Baked Potato Soup wound up with a burned bottom & a gross consistency. I like my Baked Potato Soup to be thick & creamy, with somewhat large chunks of potatoes in a smooth broth. I was not initially sold on this soup when I tasted it steaming hot out of the pot, but after it rested for a while, it was wonderful. Add bacon, cheese & green onions to the mix & it is divine.
The Verdict
I am Really Into Noble Pig’s Dill Pickle, Sausage Tortellini & Baked Potato Soups. This time of year is prime for soup. I love being able to make a big pot on the weekend & have it for lunches. Also, my daughter will eat all of these soups so that’s a big deal to me. Noble Pig’s recipes are easy, affordable & tasty. What more could you want?
