This Homemade Caesar Salad Dressing is a gem. One night, we made it on a whim & it’s turned into a staple in our home. Yes, I fully understand that a legit Caesar Salad contains a raw egg, garlic, anchovies & parmesan cheese. Well, we are busy people & busy people run out of eggs!

This salad starts easy enough & you really only need 4 ingredients. Now, some of you may not love the mayo. Let it be known, mayo is eggs & oil. Yes, it’s a huge shortcut, but it works for us. Try it just once. I bet you will love it.

Homemade Caesar Salad Dressing Ingredients

We always use Hellmann’s aka Best Foods brand of mayo. It’s so good! You’ll mix up the lemon juice, anchovy paste & mustard first. Whisk it! Then add in the mayo. By the way, I’ve had this whisk for YEARS and it’s a superstar in the kitchen & so easy to clean.

Next, you’ll dress the salad. My resident chef, Derek, says a little goes a long way. be sure not to overdress the salad. Otherwise, it’s a runny mess!

Instructions

  1. 1-2 tablespoons of anchovy paste
  2. 2 tablespoons freshly squeezed lemon juice

  3. 1 teaspoon dijon mustard

  4. 1 cup mayonnaise

  5. In a medium bowl, whisk together the anchovy paste, lemon juice & dijon mustard. Add the mayonnaise & we always use Best Foods/Hellmann’s brand. Taste & add salt or pepper to flavor. If you prefer a thinner dressing, add a bit more lemon juice. 


  6. A little goes a long way dressing the salad. Don’t be as frugal with the cheese! The dressing will keep about 5-7 days in a tightly closed container.
