Birthday Cake Ice Cream

My family is swimming with July birthdays, including mine, and Sarah and I are just a few days apart.  That means cake after cake after cake, not that I am complaining!  Sarah and I both love a classic homemade cake, and it is on the menu for our special days almost every year.  Sarah even jazzes hers up with homemade sprinkles for an awesome Funfetti Birthday Cake!  As delicious as it is, there are times where there is just leftover cake, and this year I re-purposed it and made some Birthday Cake Ice Cream.

Birthday Cake & Ice Cream

Cake and ice cream is one of the all time classic combos, so putting them together is kind of a no-brainer.  I have had Birthday Cake Ice Cream before, but it was missing an essential element – actual cake!  This ice cream is not only creamy and delicious, but is has actual chunks of cake inside of it.  And sprinkles.

Birthday Cake Ice Cream Recipe

As much as I love a custard base, when I make ice cream at home I generally just go simple: cream, milk, sugar – no eggs, no tempering, no waiting for the base to cool down.  I want ice cream now!  This Ice Cream has a few additions to the basic recipe.

In addition to the cream, milk, sugar and vanilla, I added in a box of cake mix.  Normally at Really Into This we do everything homemade, but this ice cream just calls for the box – it is perfect.  I put my leftover cake in the freezer for about an hour, then crumbled it.  This helped keep the crumbled cake in nice sized chunks, which I wanted in my ice cream.

Combine your ingredients and put in a prepared ice cream maker (I love my Cuisinart).  A few minutes before the ice cream is finished, add in your sprinkles and crumbled cake. When the ice cream is finished, either serve immediately or pour into a a container and let harden for a couple of hours.

All there is left to do is enjoy!

The Verdict

I am not sure if there is anything better in the world than Birthday Cake Ice Cream!  It combines the best of both worlds, and is made even more delicious when served on top of a slice of homemade cake.  I will make a cake just to make this ice cream – it is totally worth it.  Happy Birthday!

Birthday Cake Ice Cream

This recipe combines the best birthday treats - Cake and Ice Cream!

Ingredients

  • 1.5 Cups Whole Milk
  • 3/4 Cup Sugar
  • 1.5 Cups Heavy Cream
  • 1 Tbsp Vanilla Extract
  • 3/4 Cup Cake Mix
  • 3/4 Cup Sprinkles
  • 1/2 -1 Cake Layer Crumbled

Instructions

  1. Combine milk and sugar with whisk or electric mixer and stir until sugar is dissolved.

  2. Mix in heavy cream and vanilla extract.

  3. Stir in the cake mix and combine until smooth.

  4. Pour mixture into ice cream maker according to manufacturer's instructions.

  5. While the ice cream is in the machine, crumble cold layer of cake.

  6. 3-5 minutes before the ice cream is finished, add in sprinkles and crumbled cake.

  7. Enjoy ice cream immediately or pour into container and freeze.
