Summertime cocktails are all about beating the heat and relaxing. What fruit says summer more than watermelon? This Watermelon Vodka Cooler is one of our favorite ways to cool off, and it is as delicious as it is pretty! Invite some friends over and sip this tasty, blended beverage.
Watermelon Vodka Cooler Recipe
Pick out a great watermelon – make sure it feels heavier than it looks and has a large, butter yellow spot where it was resting and ripening. Cube the watermelon and throw 3 cups in the blender along with the juice of one lime.
Because you are straining the seeds and pulp after you blend, it does not matter if you buy the seeded or seedless variety.
Add your watermelon juice to a pitcher and combine with vodka and triple sec.
Fill two glasses with ice and a shot of Midori or other melon liqueur. I like Midori for its bright green color (and I had some left over for when I made Wildfire Cocktails for the Game of Thrones Finale).
Using the back of a spoon, slowly pour Watermelon mixture over the Midori. Pouring over the spoon will allow the two liquids to layer properly.
Garnish with a slice of watermelon and a mint sprig and you’re finished!
The Verdict
Last year I was all about the Pina Colada on the Rocks, but this Watermelon Vodka Cooler is fantastic! Not only does it look like a watermelon, it is totally refreshing and delicious. It is a truly perfect summer cocktail!
Watermelon Vodka Cooler
Ingredients
- 3 Cups Watermelon
- 1 Lime
- 1/2 Cup Vodka
- 1/2 Cup Triple Sec
- 4 Oz Midori or Other Melon Liqueur
- Mint For Garnish
Instructions
Blend watermelon and juice of one lime. Strain and discard seeds and pulp.
Mix watermelon lime juice, vodka and triple sec in a pitcher.
Fill two glasses with ice and add 2 ounces of Midori to each.
Slowly pour watermelon mixture over Midori.
Garnish with watermelon wedge and mint.
