We are Downton Abbey obsessed this week! Well, we have been Downton Abbey obsessed for years.  All of us here at Really Into This rewatched the entire series to prepare for the movie.  One evening, Sarah and I were talking as she watched the episode with the Jubilee Picnic and there was an entire table full of Pimms No. 1.  We knew then and there we had to have a Pimm’s Cup pronto to feel like we were part of the party.

Pimm’s No. 1

A Pimm’s Cup is one of the best cocktails to sip on a summer day.  It is a perfect combination of fresh fruit, cucumber, and light alcohol.  I had never had Pimm’s No. 1, but I am in love with the herbal, spicy liqueur.  It is no surprise that it is gin based as the flavor is reminiscent of it.  I am already plotting some fall and winter cocktails to use the rest of the bottle!

Pimm’s Cup Recipe

The recipe for a Pimm’s Cup is simple, and best made in a pitcher.  Combine mint, orange and lemon slices to the pitcher with your Pimm’s No. 1, stir in ginger ale, and let the fruit marinate for a few minutes.  While it is sitting, slice a cucumber into wedges lengthwise and place into highball glasses.  Fill the glasses with ice, pour the elixir in, divide the fruit among them, and enjoy the refreshing cocktail.

Servings 4 drinks

Ingredients

  • 1.5 Cups Pimm's No. 1
  • 1 Orange Sliced
  • 1 Lemon Sliced
  • 1/2 Cup Mint Leaves
  • 1.5 Cups Ginger Ale Cold
  • 1 Cucumber Sliced Lengthwise into 8 Wedges
  • Ice

Instructions

  1. Fill a pitcher with Pimm's No. 1, orange slices, lemon slices, and mint. Gently stir in ginger ale. Let rest for about 10 minutes.

  2. Slice cucumbers into 8 lengthwise wedges and place into highball glasses.

  3. Fill glasses with ice.

  4. Pour Pimm's mixture into glasses, dividing fruit among them evenly.

  5. Enjoy!
