Snow Bunny Cocktail

One of the benefits of living in Northern California is the proximity to Tahoe; at least I hear that is a benefit. Somehow I haven’t made my way up there yet. This winter, two of our friends made the 3 hour trek to spend a romantic weekend, and came back raving about a delicious cocktail they had. We had to recreate it at home. The Snow Bunny Cocktail is a heavenly rum and coconut hot chocolate. A few simple ingredients and you have the perfect drink to cuddle up in front of the fire. This beverage does not disappoint.

Snow Bunny Cocktail Hot Chocolate

The Snow Bunny is simple to make. All you need is your favorite Hot Chocolate, Coconut Rum and Rumchata. My favorite hot chocolate on the planet is the recipe from a box of Hershey’s Cocoa. This is the hot chocolate that my mom and my grandmother made for me, and it instantly puts me in a delicious comfort zone. It does not matter which hot chocolate you use, just make sure it is one you love – it will be the base for the whole drink.

I made the hot chocolate first, and then poured it into the carafe from my Bonavita Coffee Maker to keep it warm. This allowed me to make the Snow Bunny Cocktail for a crowd.

Snow Bunny Cocktail Alcohol

The Snow Bunny only needs two liquors, Coconut Rum and Horchata Rum. Have you had Rumchata yet?? It is incredible, and perfect for a hot cocktail like this (it also makes a fantastic Cinnamon Toast Crunch shot when mixed with cinnamon whiskey, but that is a recipe for another day). PS, it is also great in coffee, and you can buy Rumchata creamer at the store. I paired the Rumchata with the classic Coconut Rum, Malibu.

To make the Snow Bunny, simply pour 1.5 oz of Rumchata and 1.5 oz of Coconut Rum into your favorite mug. Top with Hot Chocolate and stir. Feeling extra? Add some whipped cream on top! I made a homemade coconut whipped cream and it was the perfect compliment to the Snow Bunny Cocktail.
